We get pretty particular about our raspberries. They have to be Williamette Raspberries, grown in Westerway, just up the River Derwent from the 7K distillery. We only pick them at the height of the raspberry season, then we preserve them in our dry gin to keep the flavour fresh. No syrups, no artificial stuff, no corner-cutting. It’s no-nonsense, naturally sweet Tasmanian Raspberry Gin. Exactly how it should be. The only thing we’re not particular about is who gets to enjoy it.

INGREDIENTS
45ml of 7K Tasmanian Raspberry Gin
20ml of sugar syrup
Splash of sparkling wine
Raspberries
METHOD
In a flute glass add the 7K Raspberry Gin and sugar syrup. Stir, then top with sparkling wine and add a few fresh raspberries to garnish.
INGREDIENTS
30ml of 7K Tasmanian Raspberry Gin
30ml of 7K Modern Tasmanian Gin
60ml of pineapple juice
30ml of lime juice
20ml of sugar syrup
Pineapple ribbon
METHOD
Add all gin, juice and syrup to a shaker. Shake well with ice, then double strain into a tall glass with thinly sliced pineapple ribbon and ice. For extra impression, burn the pineapple ribbon.
