After we’ve made a batch of Tasmanian Raspberry Gin, we’re left with plenty of spent raspberries. It’d be a shame to see them all go to waste now, wouldn’t it? That’s why we're lucky to have our founder’s nan, Pam, make this special homemade gin jam with them. Sweet, sustainable and topped up with a little extra raspberry gin. Perfect for boozy brunches and tipsy high teas.

Williamette Raspberries

Direct from the Clark family’s Westerway Raspberry farm on the Derwent. Picked at the peak of the season when the fruit is at its sweetest, then preserved straight away to keep them fresh.

Juniper Berries

Juniper berries have been the base for gins for eons. It’s literally where the word ‘gin’ comes from. In our Tasmanian Raspberry Gin, you can pick up the juniper on both the nose on the back of the palate as a distinct, gin-like flavour.

Raspberry, gin and jam- delicious especially on a cheese platter

I absolutely love setting up the raspberry gin jam on a cheese platter with a nice crumbly or tasty cheese. Keep it simple and use water crackers so you can really enjoy the flavours of the jam and the cheese together. I’m also planning to caramelise some onions with the raspberry gin jam and serve it in a little tart with Camembert cheese.
