At 7K Distillery, we’ve been crafting our cult-favourite Dry Chilli Gin since 2019 — originally created as a one-off release for Dark Mofo.

But around 2020, we started getting feedback from serious chilli fiends:

“Love the flavour — but make it hotter.”

Challenge accepted.

Rather than ruin the delicate balance of our original chilli gin, we created a new beast entirely — a gin designed purely for heat-seekers.

Each 200 mL bottle of our World’s Hottest Gin contains the equivalent of three Carolina Reaper chillies — and we go even further by dropping whole chillies directly into the bottle, just so you know what you're in for.

The Carolina Reaper clocks in at up to 2.2 million Scoville Heat Units, making it the second hottest chilli on Earth.

The alcohol softens the burn fairly quickly, but not before delivering a massive punch of heat, followed by the unexpectedly fruity flavour that makes the Reaper so loved by hot sauce makers and chefs worldwide.

Despite being a young creation, word has spread fast. The World’s Hottest Gin has already been ranked as one of the top spice levels in an Australian chilli-eating competition — sitting just below pure Carolina Reaper extract.

The Ritual of Reaper.

Step 1

Cutting the Reapers

Every batch begins with carefully slicing Carolina Reapers — the world’s hottest chilli — by hand, under strict safety precautions.

This process exposes the inner flesh and seeds, allowing the gin to fully absorb the volatile oils and fiery heat locked inside each pod.

Into the Vat

We load the chillies directly into our stainless steel maceration tanks — seeds, skins, and all. No extracts. No shortcuts.

Maceration Magic

The Reapers soak for days, infusing the spirit with both searing heat and rich, fruity flavour.

Infused & Embedded

After maceration, we hand-place whole Carolina Reapers directly into each bottle — a signature move that turns every bottle into a trophy of heat.

Hand Bottled, Heat Sealed

Each batch is gravity-fed into bottles, complete with whole chillies visible inside — a warning and a promise.

Ready for Release

Every bottle is capped, labelled, and sealed for dispatch. Locked. Loaded. Hotter than hell.
